I have always loved cookie dough, and recently I was with a friend one night indulging in some vegan cookie dough ice cream that seriously lacked in the best part, and I began to dream up some options for raw cookie dough that would be a healthier (no weird fillers) and more delicious version. So here it is in all its magical goodness. You can also bake these or sub raw cacao nibs for an even healthier take on this recipe.
This is a perfect snack with healthy fats keeping the glycemic rush lower. It is still sweet enough to satisfy and really give you an excellent treat! Enjoy*
Makes a dozen Balls
Ingredients:
1 1/4 cups blanched almond flour
1/4 cup tapioca flour
1/2 teaspoon salt
1/4 + 1/8 teaspoon baking soda
1/4 cup maple syrup
1/4 cup + 1 1/2 Tbsps. melted coconut oil
1/4 cup dark chocolate chunks or chips
Directions:
Mix all the dry ingredients in a medium sized bowl. Add the coconut oil and maple syrup and fold in the chocolate chips. Roll into small balls and freeze for about an hour for an even better texture.
You can also bake these at 350F for 11-16 minutes, checking for doneness. They make excellent cookies with a fantastic texture!
